The trends in 2021 essentially followed those of 2020:

1. new plant-based and also new cultivated meat and especially fish products

Since 2019, a variety of new products and innovations have been introduced to the market. From new breakfast items to plant-based bacon and "seafood", alternative proteins are now much more than just burgers. This broadening of the product range is sure to continue as demand grows and new players enter the market and bring fresh impetus.

In particular, the range of plant-based alternatives for various seafood products will increase significantly, also boosted by higher investment in this area.

2. improved flavors and new ingredients

Ingredients are being used ever more efficiently and, above all, can offer ever more precisely tailored delicious flavors. Processes for extracting proteins from their raw materials are constantly improving and the integration of umami flavors can raise the sensory perception of new plant-based foods to a significantly higher level.

3. a further increase in consumer demand

Globally, the market for alternative proteins is growing rapidly - and will account for much of the industry's growth and innovation. New players and, in particular, major industry partnerships have brought alternative protein products to more consumers than ever before and improved product accessibility.

As availability increases, consumer awareness of alternative protein products will increase. Previous familiarity with plant-based foods is the strongest influencing factor for a purchase decision, according to studies.

The results also show that the taste of the products is the strongest driver for purchase and consumption.

4. more investment in the private sector

The overall market development of plant-based foods offers great opportunities for investors and entrepreneurs. Alternative proteins are now mainstream, so the industry is generally seen as an attractive area to invest in.

New production methods such as 3D printing, the increased use of microbial fermentation and the expansion of cultured meat production are developments that could attract more investors.

5. a greater need for public funds

Government-funded research is necessary to open up our food system to new foods. Appropriately funded research will accelerate progress towards a healthy and sustainable food system.
